ECO TEAM - Green Tomato Muffins

This is a picture of the GREEN TOMATO MUFFINS which we recently enjoyed from our harvest of the last of our AMAZING tomato crop!
Twenty-four lucky staff at FERN AVE PS got to try these muffins and the response from most was, "WOW, THIS IS AMAZING.... WHAT IS IT?"

Most were very surprised that they were sweet muffins made from tomatoes. The response was so great that we have been asked to share the recipe.
